OK, I admit to swiping this off another site and not having tried it before, but since I know we have lots of DO afficionados here, I knew I would have a guinea pig to give me an opinion PDQ. Here it goes:
Impossibly Easy Cheesecake
3/4 c. milk
2 t. vanilla
2 eggs
1 c. sugar
1/2 c. original Bisquick
2 8-oz. pkgs. cream cheese, cubed and softened
Place milk, vanilla, eggs, sugar, and Bisquick in blender. Blend on high 15 seconds. Add cream cheese and blend 2 minutes. If you don't have a blender in your camper, you can do this step at home, place mixture into a container with tight lid, and place in cooler or fridge till you're ready to bake it at camp.
At camp, spray #10 Dutch oven. Shake cheesecake mixture and pour into DO. Bake at 350 (one ring of coals under DO, one and one half rings on the lid) 40 minutes or until knife comes out clean. Cool completely. Garnish with fresh kiwi or berries as desired. 8 servings, 430 calories each.
