New CI bread pans

A few weeks ago Donna and Dennis stopped by South Pittsburgh and picked up a couple of CI bread pans for me. Donna was disappointed that we didn't try them out the day they gave them to me (Cedars of Lebonon)

Yummy I can smell the fresh bread. Fresh baked bread is one of my many weaknesses. George it looks great. :D

I'm intrigued. Did you do these over a fire?

I like cast iron, I cook with it at home a lot, and I like to make homemade bread. Been using pampered chef stones but I'd give the cast iron a go.

If I do it outside with the CI pans, they would be put in a DO They will fit in a 12" deep.
When I bake bread outside, I use just the DO, lined with parchment so far, but I will be trying directly in the pan soon.

In the house prior to getting my bread pans, I formed a dough ball and heat up a CI pan (my fajita pan) and put the ball on it after it has been pre heated. I am using the base recipe in"Artissan Bread in 5 minutes a Day"

I've got a recipe for a buttermilk wheat bread that would probably be excellent in those pans. It is kind of like a batter bread, not so much a sandwich bread. Let me know if you want the recipe and I will post it. Just made a loaf tonight. Good stuff, Maynard.

Hope you like it! Let me know if you do it in the CI pans!

Whole Wheat Quick Bread
1 egg, beaten
2 cups buttermilk
1 Tbsp molasses or honey
1 1/2 Tbsp melted butter
2 cups whole wheat flour
1 tsp soda
1 tsp baking powder
1 tsp salt

Combine egg, buttermilk, molasses and melted butter, then stir in dry ingredients that have been mixed together. Pour into greased loaf pan. Bake at 400 degrees for 1 hour.
